Hello!
After years of hunting Ruffed Grouse, I finally bagged my first Spruce Grouse. Their diet consists mainly of spruce needles and buds, along with insects (when they are in season). Not being one to forsake and waste meat, I kept it. Has anyone out there eaten one? Any recipe suggestions? I shot it with my 1898 vintage Model 1898 using 2" shells with 7/8 ounce of English No. 6 shot!

Spruce grouse can't be hunted in MI anymore because their populations are about gone. Years ago when there were a few around, guys used to say they taste like cooked pine needles. :( :(

Well.............I thawed the Spruce Grouse and fried it in some Parkay. I dipped the meat in some flour seasoned with a little salt, pepper, and a teeny bit of garlic powder. I was pleasantly surprised! It tasted different from the Ruffed Grouse that I was cooking at the same time, but it was, by no means, unpleasant! No pine needle taste, either.
