Salsa { Great as spaghetti sauce too }

15-20 medium size ripe tomatoes
5 green tomatoes chopped
1 1/2 cups celery chopped
3 cups chopped onions
3 chopped jalepeno peppers
1 cup yellow summer squash chopped
1 cup zucchini squash chopped
3/4 cup white vinegar
3 1/2 teaspoons salt
1/4 cup brown sugar
1 1/2 teaspoons cinnamon
1 small can tomatoe paste

Bring all the vegitables and salt to a boil on medium heat

turn heat down to a simmer--stirring often---let simmer for about an hour

stir in the vinegar--let simmer 15 minutes

stir in the brown sugar and cinnamon--stirring more often for and simmering another 15 minutes

Stir in the tomatoe paste until it dissolves--- and simmer another 15 minutes.

Goop for potato or macaroni salad


{It's better to have more than you need than not enough}

*****For a medium size bowl of salad*****



1 jar miracle whip salad dressing or real mayonaise

1 tsp prepared mustard

1/4 cup white sugar--{3/4 cup if using real mayonaise}

1 tsp white vinegar


Pour about 1/2 over the salad and mix in good and refridgerate for about 2 hours--when ready to serve you may want to add a little more as it will soak in a bit---you don't want to add it all at once as it will get to soupy. Save the rest of the goop in the refridgerater for the following day if you have left over salad, as the goop will soak in a litttle more and the salad may seem a little dry.

LOL-VTDW--Sounds like a winner to me. :wink:

Sass--I've never measured it---yes it does cook down quite a bit--I can it in mason jars and whatever is left over is used for chips or spaghetti. It's even good in lasagna. :D

I miss Buckskinner too. Wonder if he's had any luck with the bears this year. Actually I wonder most if he's had any "activity" this year.

Jazz that Salsa Recipe up with a few habanaro peppers ...if that don't get Yee-Haaa outta ya'...Nothin' will!..:wink:
