We have a Patch of Russian Olive Trees at the Entrance of our Driveway & they're Puttin' Out Like Crazy.
Just Picked 2 Gallon Jars & Started Curing them. The ones we Pickled Last Year (1qt) as an Experiment
Came Out Great. Better than the Kalamata Olives from the Store.
Decided that Since we Have So Many This year (Wet Mild Summer) that I was gonna Try
& Cure them the Old Fashioned Way, By Brining them.
Gonna Soak them in Brine for 1 Month. Changing the Brine Every Week. (1/4 Cup Salt to 1Qt Water)
Then Soak them in Water w/ 1/2 cup White Vinegar for another Month, Changing it Out Every Week.
After that I'm gonna Divide them Up into Quart Jars w/ Different Marinades.1 Qt ea:
1)50/50 Balsamic Vinegar & Water w/ Oregano & a Few pcs of Fresh Wild Garlic.(Italian)
2) 25/75 White Vinegar & Water w/ 1Tbsp Sea Salt.(Greek)
3) 1qt Water w/1/8 Cup Sea Salt.(Spanish)
4)50/50 Cider Vinegar & Water w/ Red Pepper Flakes & a Little Chopped Onion.(Cajun)
These were Picked Green Just as they're Starting to Ripen & Turn Reddish.
Next Batch will be Picked When the are Fully Ripe & Turn More Red.
Aughta Be Some Good Eatin' By Christmas Time.
Good Thing 'Cause My Family Loves Olives.

MJ : They Should be Ready by Election Day.

Dear Uncle Sarge

I know it's been a long time since you saw me..... probably the family reunion when cuzin Joe Bob tripped on Grandpa's rockin chair and knocked him off the front porch. Sure was funny though when Grandpa's shotgun accidentally went off and blew all them fake flowers from the top of old Aunt Molly's hat. Joe Bob was none too happy with having to buy her a new hat (and underwear). Anyway, since we're kin and all, and I eat a couple of big spoonfulls of garlic/jalapeno olives every night before I go to bed, maybe you could ship me a big jar or three of those wonderous green jewels. I usta be able to get mail just by having it sent "General Delivery, Stumpwater, Texas", but I don't think it works like that now, so maybe you could send them to Aunt Molly's grand daughter Sara since she's in the big town just on the other side of the Sabine River from me (and she has an address).

p.s. whatever happened to the triplets? I haven't heard anything from them since that unfortunate explosion of the barn at the old family farm.

Good lord I've never seen them that big. The ones I've seen around the fruit was probably thumbnail sized or bigger.

Oh Yeah! They Average about 1 & 1/2 inch.
And there's Still about 2 More Gallons Worth On the Trees :eating:

Garlic is Pickled in 3/4 Jar White Vinegar + 2Tbsp Sea Salt & Topped Off w/Well Water.
Makes 4 some Real Good Eatin'

Now is that the thin blue green stemmed wild garlic that pops ups in your yard her in VA or some special Arkansas type wild garlic.

Totally Different Plant. What you're talkin about are Scallions. More Like Green Onions than Garlic.
This Garlic has Broader Leaves & a Very Tall Central Stem w/ a White Flower that Looks Like a Snowball.
Like This

Allium sativum
Scallions Are Real Good Too. Used to Get those in NC . They Called em "Ramps" there.
Pickle em Same Way Too. Also Good Fried w/ Deer Liver or Heart.:eating:

Now Have Almost 4 Gallons of Olives Curing.
Just Picked the Last of them Yesterday.
All that's Left On the Trees are Little Ones & the Ones the Bugs & Animals have Chewed Up.
Been a Good Harvest Though. Now All I gotta Do is Wait.
And Change out the Brine 4 the Next few Weeks.
