What would I need to do to change from a capped forend to a banded style forend?

You'd have to groove the bottom of the barrel and the top of the mag tube to accept the band stud/screw.

The longer forearm should hide the dovetail for the cap tenon.

The dovetail will be right at the end of a carbine forend I think. The attachment points are different, the band screw passing thru about 1.5" behind where the forend tennon would be so it'd be easy to cut that groove but I believe the dovetail would be showing at the end of the forend. Thats for a regular 336 or 1895. The Cowboys have shorter forends and Erik would be on the money regarding those guns.

Thanks guys! Your right on the money with the position of the dovetail. Now I have to decide whether it's worth my time installing and shaping a dovetail filler plug and then refinishing it.

No, its not worth the time. I would find some walnut from ebay with the cap setup. Like this:
