Caprese Pasta Salad

Ingredients:

20 cherry tomatoes halved
16 sticks of mozzarella string cheese cut into ½ inch pieces
2 cups dry multi-colored spiral pasta
Salt
Pepper
¼ cup of olive oil
¼ cup chopped basil

Directions:

Cook pasta according to the package directions
Combine ingredients, add salt & pepper to taste
Refrigerate 30 minutes and serve.

Notes: 1st attempt as per recipe and it was good but….
2nd attempt increased pasta to 3 cups, reduced cheese sticks to 10 and sliced ¼ inch, added diced red bell pepper and fresh chives

Nice recipe. The other thing about pasta salad is how variable it is. If you lose the pasta and have some really good tomatoes and equally good mozzarella, all you need is a drizzle of olive oil and some fresh basil. Add a piece of good bread and wow!

Now a light and figure friendly variation is 2-3 chopped fresh tomatoes, 2 TBS. of olive oil, 1 TBS balsamic vinegar, S&P to taste, arugula, 1 tbs. of cheese and 1 lb cooked pasta. Except for the cheese and olive oil this has virtually no calories.
