About 25 years ago I decided I wanted something better than what was available in the sporting goods store. The ones I saw did not have a hook on each side that would hold the meat if the load became unbalanced. So, using scrap that I had on hand , I made a collapsible gambrel that would pack easily. Formed a deep hook on each side with long nails. Pic shows how cross brace slides into each other. I've cut deer lengthwise and removed one half and the half stayed on the hook. Looks like it should work pretty well, a well thought out design. I like the foldability should work well if you hunt the back country and need to skin and quarter to pack out the meat, weight might be an issue in that case though. I like it.
