



O.K. guys and gals, I tried smoking elk ribs this weekend. I looked on the net for any recipes or suggestions and did not find much of anything on the subject. I smoked them for 5 hours at 175'. They cooked well but were too tough to eat. The oak flavor was great along with my home dry rub and sauce, but I felt like a caveman gnawing on a mammoth.
Since this was a bust, I threw the ribs into a crockpot with a couple bottles of BBQ sauce. Some of them were great others still tough. Before someone asks if I removed the fascia, yes I did. Any comments or advice is welcome, though I have no idea when I will get elk again.

I put the elk ribs that were too tough to eat into a crock pot and cooked them with BBQ sauce and 2 cups water for 10 hours. Quite a bit of the meat was fall off the bone tender, but there was still enough meat that was very chewy, and I am not talking about the grizzle. I certainly will not be cooking elk ribs again. It is too labor intensive for too little good meat.
